Homemade Spaghetti-O’s

Ingredients:

  • 1 cup ditalini pasta or anellini pasta (small ring-shaped pasta)
  • 2 cups tomato sauce
  • 1/2 cup tomato paste
  • 1 cup chicken broth or vegetable broth
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon paprika or 1/4 teaspoon dried basil for extra flavor

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the ditalini or anellini pasta to the boiling water.
    • Cook according to the package instructions until the pasta is al dente, usually about 8-10 minutes.
    • Once cooked, drain the pasta and set it aside.
  2. Prepare the Tomato Sauce:
    • In a large saucepan, combine the tomato sauce, tomato paste, and chicken or vegetable broth.
    • Stir the mixture over medium heat until the tomato paste is fully incorporated.
    • Add the sugar, garlic powder, onion powder, and any optional seasonings (such as paprika or basil) to the sauce.
    • Season with salt and pepper to taste.
    • Bring the sauce to a gentle simmer, stirring occasionally.
  3. Add the Milk and Cheese:
    • Reduce the heat to low and slowly stir in the milk until well combined.
    • Add the shredded cheddar cheese to the sauce, stirring constantly until the cheese is melted and the sauce is smooth.
    • Add the butter to the sauce and stir until melted and incorporated.
  4. Combine Pasta and Sauce:
    • Add the cooked pasta to the sauce and stir gently until the pasta is evenly coated with the creamy tomato sauce.
    • Continue to cook on low heat for a few minutes to allow the flavors to meld together.
  5. Serve:
    • Serve the Homemade Spaghetti-O’s hot, garnished with a little extra shredded cheese or fresh basil if desired.
