**Ingredients:**
– 1 can (200g) of salmon, drained
– 2 cups of cooked jasmine or brown rice
– 1 small cucumber, thinly sliced
– 1 carrot, shredded
– 1 avocado, sliced
– 1 tablespoon soy sauce
– 1 tablespoon Sriracha or your favorite hot sauce
– 1 tablespoon sesame oil
– 1 tablespoon rice vinegar
– 1 teaspoon honey
– 1 teaspoon sesame seeds (optional)
– 2 green onions, chopped
– 1 handful of mixed greens or spinach
– Nori seaweed sheets or furikake (optional for garnish)

#### **Instructions:**

1. **Prepare the base.**
Start by cooking your rice according to package instructions. Once ready, set it aside to cool slightly.

2. **Make the spicy dressing.**
In a small bowl, whisk together the soy sauce, Sriracha, sesame oil, rice vinegar, and honey until smooth. This will be your spicy, tangy dressing.

3. **Prepare the salmon.**
Drain the canned salmon and gently flake it into a medium bowl. Pour about half of your spicy dressing over the salmon and toss lightly to coat.

4. **Assemble the rice bowls.**
