Hearty Corned Beef and Cabbage

Servings: 4-6
Prep Time: 15 minutes
Cook Time: 3 hours
Total Time: 3 hours 15 minutes

Ingredients:

  • 3-4 lbs corned beef brisket
  • 1 tablespoon pickling spice (usually included with the brisket)
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 6-8 medium potatoes, quartered
  • 5-6 carrots, cut into chunks
  • 1 small head of green cabbage, cut into wedges
  • Water or beef broth (enough to cover the brisket)
  • Fresh parsley (for garnish, optional)

Instructions:

  1. Prepare the Brisket: Rinse the corned beef under cold water to remove excess brine. Place it in a large pot or Dutch oven and add the pickling spice, onion, and garlic. Cover the brisket with water or beef broth.
  2. Simmer the Beef: Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 2.5 hours. The meat should be tender and easily pierced with a fork.
  3. Add Vegetables: After the brisket has cooked for 2.5 hours, carefully add the potatoes, carrots, and cabbage wedges to the pot. Make sure the vegetables are submerged in the broth. Cover and continue cooking for another 30-45 minutes, or until the vegetables are tender.
  4. Serve: Once everything is cooked, remove the brisket from the pot and let it rest for a few minutes before slicing against the grain. Serve with the tender vegetables on the side. Drizzle some of the cooking liquid over the dish for added flavor.
  5. Garnish and Enjoy: Optionally, garnish with fresh parsley for a pop of color. Enjoy your hearty corned beef and cabbage, perfect for any family gathering or special occasion!
