Savory Slow-Cooked Corned Beef and Cabbage

    • 3 to 4 pounds corned beef brisket

    • 1 tablespoon black peppercorns
    • 4 cloves garlic, minced
    • 2 bay leaves
    • 1 onion, quartered
    • 4 cups beef broth
    • 2 cups water
  • For the Vegetables:
    • 6 medium red potatoes, halved
    • 4 large carrots, cut into large chunks
    • 1 small head of green cabbage, cut into wedges
    • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Brisket: Place the corned beef brisket in the slow cooker. Sprinkle the mustard seeds, black peppercorns, minced garlic, and bay leaves over the top. Add the quartered onion.
  2. Add the Liquid: Pour in the beef broth and water, ensuring the brisket is mostly submerged. This will help to tenderize the meat during cooking.
