Baked Feta Eggs

Ingredients:

  • 6 large eggs
  • 200g feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 small tomato, diced
  • 1/2 cup baby spinach, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Crusty bread, for serving

Instructions:

  1. Preheat the oven to 180°C (350°F). Lightly grease an oven-safe skillet or baking dish with olive oil.
  2. Sauté the onions and garlic: In a small pan over medium heat, add the olive oil. Sauté the chopped onions for about 3-4 minutes until soft. Add the minced garlic and cook for an additional minute until fragrant.
  3. Prepare the filling: In the greased skillet or baking dish, spread the sautéed onions and garlic evenly. Add the diced tomatoes and chopped spinach. Sprinkle the crumbled feta cheese on top. Season with oregano, red pepper flakes (if using), salt, and pepper.
  4. Create wells for the eggs: Using the back of a spoon, create 6 small wells in the feta mixture. Crack an egg into each well.
  5. Bake the eggs: Place the skillet in the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny. For fully cooked yolks, leave the dish in the oven for a few extra minutes.
  6. Garnish and serve: Once baked, remove the skillet from the oven. Garnish the dish with freshly chopped parsley and a pinch of extra red pepper flakes if desired. Serve immediately with crusty bread for dipping.
